Butternut Squash Soup

supports the Liver, Lung, and Stomach
This Butternut squash soup is great for supporting Liver, Lung, and Stomach. Make sure to use both the green and white portions of the green onion, and be sure to not scorch them while cooking. Green onion is excellent during seasonal changes when cold and flu season.
Butternut squash loves to harmonize with other fruits and veggies so let your intuition run wild! Allow your intuition to lead you in your cooking. I even recently added 1/2 can of coconut cooking milk and curry seasoning for a Thai flare.

Ingredients:
~ One Squash: peeled and diced (it is ok to buy it already chopped!)
~ One bunch of scallions: dice 1/2 way through the green, down to the tip of the white
Directions:
Warm up a large stock pot at low heat.
Add enough grape seed, walnut, or sunflower oil to cover the bottom in a thin layer.
Allow to heat up for several minutes.
Add the scallions and saute for several minutes, don’t scorch them (though that just shifts the flavor)
Add the squash and saute for 5 minutes, stirring often.
Add in a dash of mushroom seasoning while you saute.
Add enough hot water to cover the squash.
Bring to a boil.
Lower the heat, cover, and simmer for 15 minutes.
Add a small splash of cooking wine and simmer for 5 more minutes.
Blend with a hand blender or VitaMix until smooth.
